    Signatory bestaat dertig jaar en dat wordt gevierd met een reeks zeer bijzondere whisky’s. Een daarvan is van een gesloten distilleerderij die we niet meer zo vaak tegen komen. Deze Caperdonich werd gedistilleerd op 13 juni 1995. Vervolgens rijpte hij 23 jaar op refill sherry hogshead # 95050. Botteling volgde op 18 juli 2018. De vatsterkte bedroeg toen 58.4% en het vat gaf nog 265 flessen prijs.

    De Caperdonich distilleerderij werd in 1898 gebouwd. In eerste instantie was de naam simpelweg Glen Grant #2, want van meet af aan was Glen Grant de absolute nummer een. James Grant was de oprichter van beide distilleerderijen. De twee distilleerderijen, tegenover elkaar gelegen, waren vroeger door een pijplijn met elkaar verbonden, die in die tijd door de bewoners van het plaatsje Rothes de "whisky pijp" genoemd werd. Het verhaal gaat, dat de bewoners van Rothes graag een stukje omliepen, om in de pijplijn een gat te boren en zodoende aan hun gratis whisky te komen. Rond de eeuwwisseling werd de productie van whisky op een laag pitje gezet als gevolg van crises en slechtere verkopen. De productie werd tussen 1902 en 1965 zelfs totaal stopgezet. Na 1965 werd de Caperdonich distilleerderij door "The Glenlivet and Glen Grant Distilleries Ltd". overgenomen en gerestaureerd. Als gevolg van wetgeving werd de naam in Caperdonich veranderd, twee distilleerderijen met dezelfde naam was niet langer toegestaan. In 1967 werden er twee nieuwe stills bijgeplaatst en de distilleerderij werd gemoderniseerd. Ondanks deze uitbreiding, maar dankzij technologische vernieuwing, kon men met de twee reeds jaren trouwe medewerkers verder. In 1977 werd de distilleerderij door Seagram overgenomen en in 2001 volgde overname door Pernod Ricard. In 2002 werd Caperdonich gesloten en tot afgrijzen van de vele liefhebbers in 2010 zelfs gesloopt.

    Caperdonich 23 yo 1995/2018 (58.4%, Signatory Vintage, 30th Anniversary, cask #95050, refill sherry hogshead, 265 bottles) Four stars I’ll say it again, what a wonderful collection that was! Couldn’t we keep celebrating for a wee while?... Colour: gold. Nose: there’s something austere again, such as leaves and grasses, but this time we’ll also find struck matches and quite some black earth and moss as well as some menthol, but all that would slowly go away, leaving more room for notes of dark pancake syrup, glazed chestnuts, and a little sweet and moist pumpernickel. With water: lemon squash and lemongrass, jelly babies, and Kougelhopf dough. Mouth (neat): big and strong, this is almost manzanilla and limoncello, fifty-fifty. And some artisanal (and lethal) kirsch to push that towards these 58%. Notes of Fernet-Branca, artichoke, Campari… With water: does a U-turn and gets much, much fruitier. More jelly babies, lemon drops, Fanta… Finish: long, and back on Campari and other bitter liquids. Fresh marzipan in the aftertaste. Comments: careful with water. It’s not a very easy drop, you rather have to work on it, but it would then deliver once you’ve found the right amount of water. SGP:561 - 85 points.

    Tasting notes Angus MacRaild, whiskyfun. com, 88 punten:
    Colour: gold. Nose: much bigger and ‘fatter’ than the SMWS. This is all on golden syrup, hot cross buns, buttery crumpets, Golden Grahams breakfast cereal, a drizzle of olive oil and after a short while a few more mechanical aspects as well. Hints of oily rag and tool boxes. I also get wee touches of caraway, mint julep, ginger biscuits and various kinds of fruit teas. Some kind of spiced mead and a few other stewed garden fruits. With water: now the fruits come to the fore. In the form of fruit salad juices, fruit jellies, kiwi, plum jam and gooseberry. Perhaps a couple of pineapple cubes from the sweetie shop as well. Also some drier autolytic notes of bread dough and baking soda in the background. Mouth: lean, sleek and rather syrupy with white pepper, star anise, jasmine tea, black olive, some very delicate ointment notes and spicy cocktail bitters. Unusual and very good I think. Develops towards freshly baked breads - wholemeal - and notes of dried dark fruits such as date and sultana. With water: lemons and limes. Sunflower oil, green tea, hibiscus, parsley and bay leaf. Again it’s treading this tightrope between drier, more tertiary elements and various fruity subtleties. Holds your attention well. Finish: good length. Lots of lemon cough drops, orange cordial, cocktail sugar syrup, butter biscuits and a few dried herbs. Comments: Unusual, interesting and very good latter era Caperdonich. Seems the distillate didn’t quite run out of steam after all! Yet another solid selection for Signatory’s 30th birthday bottlings. SGP: 561 - 88 points.
